Prepare syrup with water, sugar and honey and heat to 121°C.

Whip egg yolks while slowly adding syrup, cool slightly and incorporate butter gradually, then cardamom.

Chill 1 hour.

Fill pastry boats with berries and pipe buttercream on top.
