    Cut phyllo into rectangles, roll around metal molds, seal with egg yolk and bake at 200°C for 6 minutes.

    Caramelize apples with sugar, butter, spices and lemon zest.

    Mash apples, add ricotta and whipped cream.

    Chill 30 minutes.

    Fill cannoli with apple-ricotta mousse and garnish with mint or apple slices.
