    Start by removing the outer leaves of the cabbage and rinsing it.

    Cut the cabbage in half with a sharp kitchen knife, then finely shred both halves

  • If the strips are too long, cut them in half

    Place the cabbage in a large salad bowl.

    Drain the green lentils, rinse them under cold water, and add them to the bowl

  • If you prefer to cook your own lentils, start with this step — it takes longer.

    Be sure to let them cool completely before adding them to the salad

    Peel the apples, cut them in half, and remove the cores

  • You can also keep the skin on — just wash the apples thoroughly.

    If possible, choose organic fruit

    Slice the apples into thin wedges and add them to the salad.

    Sprinkle the Galbani Parmigiano Reggiano D.O.P. shavings over the ingredients.

    Roughly chop a handful of walnut halves and add them to the bowl.

    Finely chop the parsley and add it as well.

    Prepare the dressing:

    In a small bowl, mix 2 tablespoons apple cider vinegar, 2 tablespoons olive oil, salt, and pepper.

    Whisk vigorously

  • To sweeten the vinaigrette, add a spoonful of honey.

    For a stronger kick, add a splash of lemon juice
