Prepare the dough- In a large bowl, mix the semolina flour and the eggs until you obtain a very smooth mixture.- Knead it with your hands on a floured work surface until it is smooth and elastic.- Shape the mixture into a ball. Cover and let it rest for 30 min.

Make the pasta- After resting, remove the plastic wrap and place your dough on your floured work surface.- Roll out the dough with a rolling pin, a machine, a pasta roller or any other kitchen tool to spread it and obtain the thickness you want.- Cut it into tagliatelle or any shape you like.- At this stage, let them dry for about 20 min.

Cook the porcini mushrooms- Gently clean your porcini mushrooms with a damp cloth so as not to damage them with water.- In a frying pan, heat the olive oil and sauté a finely chopped or sliced onion until it becomes translucent.

For more flavor, you can add a pinch of the chili pepper of your choice to spice up the recipe.

Add the porcini mushrooms and cook them until they are golden.

Season everything with salt, pepper and a few fresh oregano leaves.

Cook the pasta- Bring a large pot of salted water to a boil.- Add the fresh pasta and cook it for 2 to 3 min, until it is perfectly al dente.

After cooking it for the time that best suits your taste, drain your pasta.
