Divide the egg yolk from the whites and place the yolks into a bowl.

Add grated pecorino and ground pepper and mix well.

Bring salted water to boil and cook the spaghetti.

Slice the guanciale into thin strips.

Brown the guanciale in a pan for 2 minutes until crisp.

Drain the pasta and place it in the pan with the guanciale and some hot cooking water.

Stir on the heat for a few seconds, then turn off the heat.

Pour the egg mixture into the pasta and mix well.
