    Start by preheating your oven to 180°C.

    Prepare your baking tray by placing a sheet of parchment paper brushed with olive oil.

    For a more authentic taste, you can finely grate a piece of Galbani Parmigiano Reggiano yourself

    Place the Parmigiano Reggiano and Grana Padano in two separate bowls.

    Add 1 tablespoon of crème fraîche to each bowl, then pour half of the beaten egg into each mixture.

    Mix until the texture is smooth and uniform.

    Add any condiments you like: black pepper, aromatic herbs, or finely powdered sun‑dried tomatoes. Combine well

    Take your prepared baking tray and drop small spoonfuls of each cheese mixture onto the parchment paper.

    Using a small spoon, form small piles, then gently flatten them with a rolling pin or the back of the spoon.

    Space them apart by a few centimetres to prevent sticking during baking

    Baking time varies depending on the thickness of your cheese piles.

    Generally, 5 minutes is enough for a tray of crisps.

    Watch them closely: when they turn golden, they’re ready.

    If your oven or tray is small, feel free to bake them in batches

  • No oven? You can cook them in a special quick‑cooking pan. Shape small round piles, heat until melted and golden, then remove with a spatula

    Let the crisps cool completely so they become firm and crunchy.

    Once fully cooled, carefully lift them off the tray with a spatula.

    You can sprinkle extra condiments over them once cooled.

    These crisps also make a beautiful edible decoration for verrines or risotto

  • Like many Italian cheeses, Parmesan pairs wonderfully with Italian wines such as Chianti or Barolo
