    Discover the delicate flavour of zucchini combined with smooth, creamy Galbani Burrata. This simple and quick vegetable and cheese tart brings out all the flavours of Italy. Perfect for a light yet indulgent dinner accompanied by a salad, this easy tart is sure to please even the most refined palates

    Preheat your oven to 180°C. Spread the puff pastry into a greased tart pan dusted with a handful of flour. Alternatively, you can use parchment paper if you prefer not to add butter.

    Bake the tart base for about 10–15 minutes.

    Rinse the zucchinis under cold water and lightly peel away any damaged skin. Slice them thinly to create nice even strips.

    In a mixing bowl, whisk the egg together with the grated Parmesan. Add salt, fresh herbs, and freshly ground pepper.

    You can also add a minced garlic clove and a handful of chopped basil if you prefer

    Arrange the zucchini slices on the pre-baked tart crust in your preferred pattern. Drizzle with olive oil.

    Pour the egg–Parmesan mixture over the vegetables. Add the tomato slices evenly over the top. If needed, add a little more salt.

    Sprinkle the pine nuts across the tart.

    Bake for 25–30 minutes, until the pastry is golden and the egg‑cheese mixture is set and creamy.

    If you want perfectly golden edges, lightly brush the crust with melted butter before baking

    Once baked, let the tart rest for a few minutes before serving.

    Place a Burrata in the center of the tart and gently tear open its outer shell so the creamy interior spreads across the surface before slicing.

    If you like, add a drizzle of balsamic vinegar to enhance the flavours

  • • For a meatier taste, add small pieces of bacon or grilled prosciutto before baking.

    • You can replace zucchini with spinach for a refreshing twist.

    • Swap the tomato slices with sun-dried tomatoes, or alternate colours using cherry tomatoes for a brighter, more appetizing look.

    • This Italian-style vegetable and cheese tart can be served warm or cold, as a main dish or as an appetizer.

    • For a stylish presentation, pre-slice the tart before serving. Then place the Burrata in the center and open it — every piece will be coated with its creamy goodness
