Start by delicately peeling the green asparagus to remove damaged and fibrous parts. Then cut off the tough ends.
-
3
In a large frying pan, heat the olive oil over medium heat.
-
4
Sauté the onions, cut into small dice or thin slices, in your pan.
-
5
Add the asparagus to the hot pan and sauté for 5 to 7 minutes, stirring from time to time, until they are tender but still crisp. No need to pre-cook them in water.
-
For a richer flavor, you can add a knob of salted butter while cooking the onions. If you want soft yet crisp onions, you can add 2 to 3 tablespoons of beer.
-
6
Once the asparagus is nicely seared, add 2 tablespoons of Ricotta and let the cheese melt gently into the asparagus.
-
7
Season with salt, pepper and oregano according to your tastes and preferences.
-
At this stage, you can add 1 to 2 crushed garlic cloves to enhance your preparation. For a unique fruity flavor, cut apples into small pieces. You will get an appetizing sweet-and-savory recipe.
