This refreshing cherry tomato salad paired with Galbani Burrata and Parmigiano Reggiano D.O.P. is perfect as a light starter or a sunny summer dish. The recipe highlights simple, fresh ingredients and brings together color, creaminess and crisp textures for a result that everyone will love

    Wash, drain, and halve the cherry tomatoes. Place them in a large salad bowl.

    For an even more Italian touch, you can mix in chopped sun dried tomatoes or homemade confit tomatoes

    Peel and dice the avocado. Gently clean the button mushrooms (without scrubbing) and cut them into small cubes.

    Green olives can also be added for extra Mediterranean flavor

    In a small bowl, mix together:

    • olive oil

    • balsamic vinegar

    • lemon juice

    • salt & pepper

    Then pour the dressing over the tomatoes, avocado and mushrooms. Toss gently so the ingredients are well coated without being crushed.

    If you'd like a stronger flavor, crush one or two garlic cloves and add them to the dressing

    Chop or finely slice fresh basil leaves and add them to the bowl.

    Parsley can be used as an alternative for a different aromatic profile

    Sprinkle Parmigiano Reggiano over the salad. Toss lightly so the cheese is distributed evenly.

    For more crunch or richness, add toasted pine nuts — or even garlic croutons

    Create a small well in the center of the salad and place the Burrata in it.

    Serve the salad on its own or alongside toasted bread with herbed cream cheese, a savory tart, or a clafoutis. To enjoy the Burrata the true Italian way, drizzle a little olive oil and balsamic vinegar over it just before serving. If you don’t have Burrata, feta is an acceptable substitute (though the texture will differ)

    • Replace avocado with cucumber for a lighter version.

    • Add one or two boiled eggs for a more filling dish.

    • Mix in black olives — their bold taste pairs wonderfully with sweet cherry tomatoes and creamy Burrata.

    • Use multicolored cherry tomatoes for a bright, summery look.

    • Add grilled chicken or Parma ham for a non vegetarian option.
