Wash, drain and cut your cherry tomatoes in half. Then place the chopped vegetables in a large salad bowl.

  • Add your preparation of chopped candied red tomatoes to make your salad more authentically Italian.

  • 3

Peel and dice the avocado. Carefully wash your button mushrooms (without rubbing them). Cut the mushrooms into small cubes.

  • You can also add pitted green olives.

  • 4

In a small bowl, mix the olive oil, balsamic vinegar and lemon juice. Season with salt and pepper to create the vinaigrette that suits your taste. Pour the vinaigrette over the tomatoes, avocado and mushrooms in the bowl. Mix gently so that all the ingredients are well coated without being crushed.

  • You can also crush one or two cloves of garlic and add them to your vinaigrette to enhance the flavor of your salad.

  • 5

Cut a few fresh basil leaves. They can also be chopped. Add them to your preparation.

  • Using parsley instead of basil is another possible variation.

  • 6

Sprinkle your salad with Parmesan. Gently toss the salad so that all the ingredients are evenly distributed.

  • For a heartier and crunchier dish, you can add toasted pine nuts, or not, as well as small garlic bread croutons.

  • 7

Make a hollow in the center to place your Burrata in the heart of the salad. You can serve the salad on its own, with toasted bread topped with fresh cheese, garlic and herbs, a savory clafoutis or tart, or as an accompaniment to your quiches.

  • If you would like to serve your Burrata the Italian way, drizzle it with a little olive oil and a little balsamic vinegar when serving. This acts as a flavor booster for the Burrata, making it even tastier. If you do not have Burrata, you can also use feta.
