Remove the cherry tomatoes from the vine and rinse them in clean water. Pour a drizzle of extra-virgin olive oil into a frying pan. Heat over low heat until the oil begins to shimmer. Add the cherry tomatoes and the minced garlic. Cook for 5 to 7 minutes, until the tomatoes begin to split and caramelize slightly. Remove the pan from the heat. Drizzle the tomatoes with balsamic vinegar, add the 2 tablespoons of water and the 2 tablespoons of cane sugar. Season with salt. Once freshly ground, add pepper to taste.
-
At this stage, you can add other ingredients for seasoning: oregano, thyme, or a pinch of Espelette pepper for a spicier touch.
-
Cook for another 2 to 3 minutes until the vinegar has reduced slightly and the sugar has been fully absorbed by the cherry tomatoes.
