    • In a large bowl, mix the flour (or semolina blend) with the eggs until you obtain a smooth mixture.

    • Shape into a ball, cover, and let rest for 30 minutes.

    Shape the fresh pasta

    • Remove the dough from the wrap and place it on a floured surface.

    • Roll it out using a rolling pin, a pasta machine, or a kitchen tool of your choice until you reach the desired thickness.

    • Cut into tagliatelle or any pasta shape you prefer.

    • Let the pasta dry for about 20 minutes before cooking

    Cook the porcini mushrooms

    • Gently clean the porcini with a damp cloth to avoid soaking them in water.

    • In a pan, heat olive oil and sauté the chopped onion until soft and translucent.
