Here, it brings an elegant twist to Parmigiano Reggiano D.O.P. & Galbani Ricotta pasta, turning a classic into a refined, sophisticated meal

Bring a large pot of salted water to a boil. Add your preferred pasta and cook until al dente. If you’re unsure about al dente timing, check the package instructions. For added flavor, you can drop a vegetable or meat stock cube into the cooking water

Once cooked, drain the pasta and set aside. Save a small amount of the cooking water — it will help adjust the sauce if needed

In a large pan, heat olive oil over medium heat. Add the sliced black garlic and cook gently for 2–3 minutes

Stir in the diced tomatoes and cook for about 5 minutes

Lower the heat and add Galbani Ricotta or crème fraîche, along with Parmigiano Reggiano.
Stir well until the sauce becomes smooth and combined. You can add onions for a stronger flavor —

Mix the cooked pasta into the sauce so it’s fully coated

If the sauce is too thick, loosen it with a bit of the reserved pasta water
